What a fantastic and easy recipe!! These pancakes are light and fluffy. I used fat free cottage cheese and 2 eggs and added some cinnamon, as others have suggested. Yum!

Mmm – I just love cottage cheese. Initially I didn’t really take to it but after trying it time and time again it’s grown on me. These pancakes look amazing, thanks for sharing the recipe

We love cottage cheese and have it in the refrigerator almost all the time. I make potato pancakes almost the same way, so I definitely plan on making these Cottage Cheese Pancakes. Plus they are healthier for my husband who is a diabetic. I can substitute the sugar for a Splenda product.

These look so yummy…but almost no flour in them. Not quite what I would think of as a pancake, Perhaps these are more pan cheesecakes!

I have to admit the thought of putting cottage cheese in my pancakes did not sound appealing at first but once the ingredients were mixed the final product looked really good.
